The short version: <a href="http://www.supernature.com.sg/">Supernature</a> at Park House has a company policy that forbids customers from taking photos as well as even *writing* any notes in the store.</p>
<p>The long version: Followers of my ConsumerWatch series on this blog will know I like to compare products and prices to make the most informed choices. In one of my rare visits to <a href="http://www.supernature.com.sg/">Supernature</a>, I was excited to find some products I had recently enjoyed in the UK and amongst their wide range, certain brands I haven&#8217;t seen in other Singapore shops. I was doubly excited to note that despite the shop&#8217;s high prices for most goods compared to other stores in Singapore, some things were significantly cheaper! I was in the middle of noting down all the products I planned to buy on my next visit when the shop staff caught me on CCTV and swooped in to stop my suspicious activity. Of course, I could have promised to stop and continued shopping, but I was so shocked and humiliated that I voluntarily left the store. I also decided not to argue about &#8216;company policy&#8217; with the staff ,who was most likely just a regular worker doing her job and not a manager (she was wearing an apron and spoke to me in Mandarin).</p>
<p>Stores have every right to lay down rules for their customers, and the right to stop people from shopping in their store. From their point of view, I could certainly have been an agent of industrial espionage from a rival company. As an expanding and highly-commercialised enterprise (wow! <a href="http://www.supernature.com.sg/">Supernature</a> really looks like a good-sized supermarket now!) located near the ultra-posh St Regis Hotel, they&#8217;re probably not interested in the kind of customer who wants to do price-comparison.</p>
<p>However, I would argue that for health foods, it&#8217;s not just about prices, but the even more important aspect of doing research about particular brands, ingredients, origin of products, possible allergic reactions etc. Looks like<a href="http://www.supernature.com.sg/"> Supernature</a> is not a store that will help me make the best consumer choices, for my health as well as my wallet.</p>
<p>As a point of comparison, at <a href="http://www.natures-glory.com/home.asp">Nature&#8217;s Glory</a>, customers can pick up a 24-page (A4 size) full product list providing details of brand names, package size and price so that you can place delivery orders from home.</p>
<p>For what it&#8217;s worth, here are the few price comparisons I observed yesterday (prices could be a few cents off, sorry I wasn&#8217;t able to take notes!):</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Recently I realised that my expensive Nalgene water bottles and ‘premium’ range Lock &amp; Lock lunch box were all made of BPA-leeching polycarbonate. Many others have already blogged about unsafe food plastics and the BPA problem before (see Just Bento: <a href="http://justbento.com/handbook/bento-basics/what-are-japanese-plastic-bento-boxes-made-of">What are Japanese plastic bento boxes made of?</a> and <a href="http://justbento.com/sigg-water-bottle-controversy-and-water-bottle-conundrum">The SIGG water bottle controversy and the water bottle conundrum</a>) and there’s plenty of information on the web about how to <a href="http://www.ewg.org/healthy-home-tips-04#whypick">choose safer plastics</a>.</p>
<p>The good news is that newer Nalgene bottles are made from BPA-free Tritan. Look out for the ‘<a href="http://www.nalgenechoice.com/">Nalgene Choice</a>’ labelling that identifies the new-range bottles. The recycling category “7” includes both BPA-polycarbonates as well as Tritan, so don’t use that as a conclusive identification of the material used.</p>
<p>The two styles of Lock n Lock Sport bottles I have been using for some years are also categorised as a “7”, and as they are from the pre-BPA-consciousness days, there’s a high chance both are polycarbonate. Some other Lock &amp; Lock bottles are safer “5” plastics.</p>
<p>However, Lock &amp; Lock has come out with several new lines of bottles, made with Tritan and all marked with large ‘BPA-free’ labels. These are not yet found on the international website, but are in the Singapore stores. I picked up two types on 30% discount at NTUC Fairprice a few weeks ago.</p>

<p>My main gripe is that the largest bottle is only 600ml, and that only in the range where the screw-lid is not attached to the bottle itself, which means the chance of dropping the lid and having to wash it before screwing it back on, not very practical when one is outdoors.</p>
<p>I  do love the positive screw grooves on the green bottle, but there’s something else that annoys me, which is that the screw grooves result in a lot of water dripping when I drink! I’ve had the same problem with insulated mugs too. The problem seems to be much less when the screw top mouth is small, such as with this <a href="http://www.nalgene-outdoor.com/store/SearchResult.aspx?CategoryID=69">narrow-mouthed Nalgene style</a> which I also have (unfortunately an old bottle, in polycarbonate).</p>
<p>So maybe I should stick to flip-top bottles? However, in my experience, the flip-tops can easily be accidentally popped open and I’ve had many spills inside my bags before :(. So I try to put them on the outside mesh pocket of my rucksack or placed upright at the side of handbag.</p>
<p>The other thing about flip-tops is that if the mouth is too small, such as this Lock &amp; Lock sports bottle, it’s hard to drink without creating a vacuum seal with your mouth.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Hello again after a long break! I have been away and will be travelling again soon so have some possibly helpful travel tips for anyone flying by <a href="http://www.singaporeair.com">Singapore Airlines</a>.</p>
<p>The last time I went overseas by Cathay Pacific, I prepared an elaborate set of bento boxes to last me halfway round the globe, as I described<a href="http://mainmainmasakmasak.wordpress.com/2008/02/02/long-distance-travel-bento/"> here</a>. This time, it was just a short 5-hour flight and I decided to order one of Singapore Airlines&#8217; <a href="http://www.singaporeair.com/saa/en_UK/content/before/plan/mealrequest/specialmeals.jsp">special &#8216;Medical Meals&#8217;</a>.</p>
<p>Here is the amazing list of &#8216;Medical Meal&#8217; choices:</p>
<ul type="disc">
<li><strong>Bland Meal:</strong> No &#8220;irritants&#8221; (e.g. black pepper, chilli powder, caffeine, cocoa, alcohol)</li>
<li><strong>Diabetic Meal:</strong> No sugar; limited salt</li>
<li><strong>Fruit Platter Meal:</strong> Fresh fruits only</li>
<li><strong>Gluten Free Meal:</strong> No wheat, rye, barley, oats in any form</li>
<li><strong>Low Sodium, No Salt Added Meal:</strong> Avoid naturally-salted, sodium-added processed foods (e.g. Baking powder, soda, MSG); no salt added during preparation</li>
<li><strong>Low Calorie Meal:</strong> Limited fats, sauces, gravy and fried items; limited sugar-rich items</li>
<li><strong>Low Fat/Cholesterol Meal:</strong> No animal fats but poly-unsaturated fatty acids allowed; limited fats, sauces, and gravy fried items; no butter, cream, whole milk cheese; only lean meat allowed</li>
<li><strong>Low Fibre/Residue Meal:</strong> Limited fibrous items (e.g. fruit, legumes, vegetables, wholegrain products)</li>
<li><strong>Non-Carbohydrate Meal:</strong> No starch and carbohydrates in any form</li>
<li><strong>Non-Lactose Meal:</strong> No lactose and dairy products (e.g. milk, milk solids, casein, cheese, cream, butter, margarine)</li>
<li><strong>Soft Fluid Meal:</strong> Mainly sieved, soupy items</li>
<li><strong>Semi Fluid Meal:</strong> Mainly pureed, minced, easily digestible items (e.g. pureed vegetables, potatoes, fruits, minced, homogenized meat, porridge, congee)</li>
<li><strong>Ulcer Diet Meal:</strong> Contains easily digestive plain poached/broiled foods (e.g. white meat, fish); no acidic food and fruits</li>
<li><strong>Nut Free Meal:</strong> Please contact our Reservation Office for the necessary arrangement</li>
</ul>
<p>After a short discussion on the phone with the airline staff, I chose the &#8216;Low Sodium, No Salt Added Meal&#8217;. On my return flight, the meal label was in Chinese, which said &#8220;無調味料&#8221;, which actually means  no added seasoning. I found out there is a option of Asian or Western versions, and I chose Western. It was a chicken breast with side vegetables and rice on the outgoing flight, and a very tender beef steak with side vegetables and potatoes on the return flight. There were also no sweet desserts. I loved the way they were all totally plain with no sauces or spices/herbs etc. yet the ingredients were flavourful enough on their own. Fabulous! Amines in the meats and salicylates in the vegetables aside, this is a pretty safe choice for me. No need to starve on long-distance travel anymore! (As long as I fly on Singapore Airlines, that is.)</p>
<p>P.S. Don&#8217;t forget Singapore Airlines offers also offers Religious Meals, Infant &amp; Child Meals, a Seafood Meal and a range of Vegetarian Meals:</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Those of you who have read <a href="http://www.fedupwithfoodadditives.info/books/setFUinfo.htm">Sue Dengate&#8217;s books on food intolerances</a> or the discussions on the <a href="http://www.fedupwithfoodadditives.info/support/email.htm">Failsafe food intolerance discussion lists</a> will have come across mention of Epsom salts (magnesium sulphate) as one way of counteracting food reactions. <a href="http://www.enzymestuff.com/epsomsalts.htm">This article</a> explains how sulphates form a key element in a particular detoxification pathway in the body, which &#8220;processes other phenolic compounds including salicylates (salicylates are a subset of phenols), artificial food colorings, artificial flavorings, and some preservatives.&#8221; Sulphates are not necessarily absorbed into the body well via the gut, so skin absorbtion by using Epsom salts is a good alternative.</p>
<p>Epsom salt is also a magnesium compound and magnesium is helpful in reducing muscle aches and stiffness as well as the tension that causes teeth grinding (see <a href="http://www.egeneralmedical.com/info-bruxism.html">here</a>, <a href="http://infoonnaturalhealing.com/teeth-grinding/">here</a> and <a href="http://www.teethgrindingcure.com/home-remedies-for-teeth-grinding.php">here</a>).</p>
<p>The <a href="http://www.epsomsaltcouncil.org">Epsom Salt Industry Council</a> summarizes the <a href="http://www.epsomsaltcouncil.org/health_benefits.htm">health benefits</a>:</p>

<p>There are also <a href="http://www.epsomsaltcouncil.org/beauty_benefits.htm">beauty benefits</a> to using Epsom salt because it can be used for exofoliating, as I learnt when I chanced upon this recipe for a <a href="http://www.vivawoman.net/2008/12/16/diy-beauty-homemade-salt-bath-scrub/">DIY Epsom salt bath scrub</a> on a great <a href="http://www.vivawoman.net/">Singapore beauty blog </a>which has a focus on natural &amp; DIY skincare. She liked the Epsom salt scrub so much that she declared it her bath staple. (If you want to know where in Singapore to get cosmetics and toiletries with minimal/no chemical additives, you&#8217;ll find many suggestions on the <a href="http://www.vivawoman.net/">Viva Woman blog</a>.)</p>
<p>However, I would suggest leaving out the food colouring, and perhaps another option to jojoba/olive/almond oil might be coconut oil. Read about the benefits of coconut oil for skin <a href="http://www.organicfacts.net/organic-oils/organic-coconut-oil/health-benefits-of-coconut-oil.html">here</a>, <a href="http://www.coconutdiet.com/skin_health.htm">here</a> and <a href="http://www.coconutresearchcenter.org/">here</a>. I also happen to need to use up a huge 1 litre bottle of virgin coconut oil from <a href="http://www.natures-glory.com">Nature&#8217;s Glory</a> :); I only use it occasionally or sparingly in baking and cooking as it imparts a very strong and distinctive flavour.</p>

Nature&#8217;s Farm has dozens of outlets all over Singapore, so it&#8217;s great if you need to stock up on dried fruit for baking at short notice.</p>
<p>I remember the days when it was one of the only places that stocked health foods, these days the limited selection falls far short of the many health food shops that have sprung up all over the island.</p>
<p>However, the dried fruit is just what I&#8217;m looking for &#8212; labelled as unsweetened and unsulphured, and the price is very comparable to my regular organic food shops.</p>

<p>Both of these seem well-organised at  very similar prices: lunch totes at S$26.90 (<a href="http://www.thelittlehappyshop.com/index.php">The Little Happy Shop</a>) and S$26 (<a href="http://www.zakkaart.com/index.php">Zakkaart.com</a>), double-tier bento boxes at S$29.90 (<a href="http://www.thelittlehappyshop.com/index.php">The Little Happy Shop</a>) and $$28 (<a href="http://www.zakkaart.com/index.php">Zakkaart.com</a>), single-tier boxes at S$17.80 (<a href="http://www.thelittlehappyshop.com/index.php">The Little Happy Shop</a>) and S$24 (<a href="http://www.zakkaart.com/index.php">Zakkaart.com</a>). Don&#8217;t forget to factor in the delivery charges (pretty minimal if by standard mail within Singapore).</p>
<p>There is also <a href="http://momo-b-world.blogspot.com/">Momo&#8217;s World</a>, which seems to be a new online shop, less professionally-organised website than the other two and with a limited selection.</p>
<p>Or perhaps you want to order directly from <a href="http://www.shinzikatoh.com/shopping.html">Shinzi Katoh&#8217;s Japan online shop</a>; prices vary according to design. Here&#8217;s a <a href="http://www.anknelandburblets.com/?p=563">guide for English-speakers</a> to navigate the site. Shinzi Katoh&#8217;s <a href="http://www.shinzikatoh.co.uk">UK website</a> also does international orders (currently 25% off lunchboxes): lunch totes are £18, single-tier boxes on sale at £7.50, double-tier ones &#8211; £8.65.</p>
<p>Don&#8217;t forget: if ordering lunchboxes, do check the size as the double-tier ones come in 460ml and 540ml. If the lunch bags are too small for you, another option could be the short tote bags which are the same height but twice the length of the lunch bags (W315×H160×D110mm).</p>
<p>N.B.: I haven&#8217;t purchased from any of these shops myself so no comments on the actual level of service. I&#8217;ll just keep wishing hard for my Christmas this year&#8230; or next.</p>

<p>Quite often I carry food for more than one meal and it&#8217;s a real hassle to get to the largest box (usually the main meal, lunch) at the bottom of the bag. Sometimes this involves unloading everything on top first, and going through the same process all over again to put the box back in!</p>
<p>After struggling with this a few times, I realised how much the two-layer bag from <a href="http://www.tzuchi.org/GLOBAL/">Tzu Chi Foundation</a> would help me. Earlier, <a href="http://mainmainmasakmasak.wordpress.com/2007/09/28/also-known-as-biandang/">I wrote about</a> the range of 便當 <em>biangdang</em> /bento equipment from this Taiwanese Buddhist organisation, which promotes concern for the environment. I&#8217;m a huge fan of their <a href="http://mainmainmasakmasak.wordpress.com/2007/09/28/also-known-as-biandang/">folding chopsticks</a>.</p>
<p>[Speaking of folding chopsticks, I found a couple of varieties, including a screw-type similar to the Tzu Chi one, at NTUC Finest Bukit Timah, near the Chinese dried foods. However, they didn't seem to be very well-made, so I would hesitate to recommend them.]</p>
<p>This bag fits a rectangular lunchbox in the bottom zippered layer, the precise size of <a href="http://mainmainmasakmasak.wordpress.com/2008/02/06/new-bento-box/">my Asvel box</a>. I usually squeeze my plastic cutlery or folding chopsticks into this section too.</p>
<p>In the upper compartment, I&#8217;ll put my fruit box, tea time snacks and <a href="http://lunchinabox.net/2007/10/30/oshibori-we-dont-need-no-stinking-wet-wipes/">oshibori</a>. There is also a small zipper pocket inside the upper layer &#8211; just nice for paper napkins but I have given those up in favour of the more environmentally-friendly <a href="http://lunchinabox.net/2007/10/30/oshibori-we-dont-need-no-stinking-wet-wipes/">oshibori</a>. Sometimes I slip in a teabag if there&#8217;s going to be hot water at my lunch destination.</p>
<p>Once I put in all these, there&#8217;s no space for my 300ml insulated mug though, unlike with my <a href="http://mainmainmasakmasak.wordpress.com/2008/11/29/2008/10/16/my-bento-bags-cream-coloured-muji/">Muji</a> and <a href="http://mainmainmasakmasak.wordpress.com/2008/11/29/my-bento-bags-2-kiwi-orange-reisenthel/">Reisenthel</a> bags.</p>
<p>Unfortunately, <a href="http://www.tzuchi.org.sg/">Tzu Chi in Singapore</a> has moved from a convenient downtown location in Chinatown to Pasir Ris. So it&#8217;s worthwhile to call ahead and ask if they have stock. They were out when I wanted to buy this bag about six months ago, and I ended up getting a friend to buy it in Taiwan for me, where it cost about S$10.</p>

<p>The German brand, <a href="http://www.reisenthel.com">Reisenthel</a>, is mostly known for its folding, environmentally-friendly shopping bags. Whilst browsing the colourful designs at <a href="http://www.tangs.com/">Tangs</a> one day, I chanced upon these small tote bags intended for young children &#8211; going by the photographs on the tags. However, they are a perfect size for bento too. I can&#8217;t seem to find this bag on the official <a href="http://www.reisenthel.com">Reisenthel</a> website though.</p>
<p>Tangs had them in three colours: kiwi green with orange trimming, sky blue with lime trimming, and if I remember correctly also pink with sky blue trimming. The price was S$12.95.</p>
<p>Features I like are the zip closure, the zippered inner side pocket, and the square base, which makes this ideal for square bento boxes that don&#8217;t fit so well into <a href="http://mainmainmasakmasak.wordpress.com/2008/10/16/my-bento-bags-cream-coloured-muji/">my Muji</a> and <a href="http://mainmainmasakmasak.wordpress.com/2008/11/30/my-bento-bags-3-two-layer-tzu-chi/">Tzu Chi</a> bags which are designed for rectangular boxes.</p>
<p>This is big enough to hold a lunch box, extra boxes for fruit, teatime snack, cutlery, <a href="http://lunchinabox.net/2007/10/30/oshibori-we-dont-need-no-stinking-wet-wipes/">oshibori</a> as well as my <a href="http://mainmainmasakmasak.wordpress.com/2008/11/29/choosing-insulated-mugs/">300ml insulated mug</a>.</p>

<p>These are three stainless steel insulated mugs that I have: 290ml <a href="http://www.thermos.com/SubCategoriesCatalog.aspx?CatCode=THER&amp;SubMenuID=0">Thermos</a> food/soup jar, 300ml <a href="http://www.usa.tiger-corporation.com/commodity/stainless_steel/index.html">Tiger</a> brand slim mug, 450ml <a href="http://www.usa.tiger-corporation.com/commodity/stainless_steel/index.html">Tiger</a> mug with compartment on top of lid for storing tea leaves. Not in the photo is a large 1 litre Thermos food flask I have in which you can make congee (rice porridge).</p>
<p>I&#8217;ve learnt that one of the very important thing to look out for is whether the screwtop grooves are on the inside or outside.</p>

<p>Initially, I used my <a href="http://www.thermos.com/Product_detail.aspx?CatCode=FOOD&amp;SubcategoryID=8&amp;ViewAll=true&amp;ProductID=503">290ml Thermos food jar</a> for hot beverages such as tea and powdered grain drinks but soon found that the drink would seep down the grooves and drip down the outside of the mug, making for a very sticky experience. With solid foods, or if you only open the mug once or twice, this is not a problem, but with hot powdered grain drinks, I would replace the lid and shake the mug in between sips throughout the day and every time I opened the lid, I&#8217;d end up having to wipe my hands and the mug with a wet tissue (or oshibori, if lucky enough to have one on me ^.^).</p>
<p>To solve the problem, I got my second insulated mug, the burgundy-coloured <a href="http://www.usa.tiger-corporation.com/commodity/stainless_steel/lineup.html#mmkb">450ml Tiger brand one</a>, where the grooves are on the inside. I discovered that of all the stainless steel insulated flasks on sale in Singapore, only Tiger brand has the grooves inside. The bad news is that the big sales &#8211; sometimes storewide at department stores or for individual stainless steel brands such as Thermos and La Gourmet &#8211; usually exclude Tiger brand. Tiger is also the most expensive of all the brands T_T.</p>
<p>This particular Tiger model has a &#8216;take-apart stopper&#8217; where the rubber parts can be removed to make cleaning easier. Tea-drinkers can also use the screw compartment on top of the lid for storing tea leaves. However, I&#8217;ve never used it as I usually brew tea in a pot and pour the ready-made tea into the mug.</p>
<p>After using my 450ml Tiger flask mostly for carrying tea, I realised that almost half a litre of tea is simply <a href="http://mainmainmasakmasak.wordpress.com/2007/05/22/tea-and-your-constitution/">too much caffeine</a> for me, resulting in stomach discomfort (and insomnia if drunk in the evening). And with no/low caffeine or herbal teas, such as <a href="http://en.wikipedia.org/wiki/Kukicha_tea">kukicha</a>, <a href="http://mainmainmasakmasak.wordpress.com/2007/05/13/mugicha/">mugicha</a>, or <a href="http://mainmainmasakmasak.wordpress.com/2007/05/27/korean-roasted-corn-tea/">oksusucha</a>, a large amount of strong brew can produce a rather unfortunate laxative effect on me!</p>
<p>Which led to the purchase of the 300ml Tiger slim mug. This is about the volume of a normal coffee mug, with an elegant, lightweight design that makes it perfect for the lunchbag. I use this flask almost everyday now. It&#8217;s so well-used that the charcoal-coloured coating has been scratched in a few places already.</p>
<p>A final word on choosing stainless steel insulated brands, I totally wasted my money on a La Gourmet mug. It&#8217;s the type with plastic lid that has a small opening with a sliding cover for you to drink from. No matter how I screw the lid on, the liquid leaks out through the screwtop grooves when I try to drink. The leakage is so bad it&#8217;s completely impossible to drink with the lid on. In fact, my freebie giveaway stainless steel mug with where the plastic drinking lid is sealed with a rubber gasket, works way better. Will never be tempted by cheap La Gourmet prices again.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Before my recent foray into breakfast cereals a couple of weeks ago, I can&#8217;t remember when was the previous time I crunched on bowl of crispy breakfast cereal in cold dairy milk. With most commercial cereals full of sugar and additives, not to mention the fact that Kelloggs cereals in Singapore are produced regionally and are much inferior in taste (as I remember from years and years ago, when I was still eating processed foods from the supermarket).</p>
<p>However, I&#8217;ve recently noticed the wide variety of breakfast cereals made from alternative grains on health food shelves, including NTUC Finest. For example, from <a href="http://www.arrowheadmills.com/products/cold-cereals.php">Arrowhead Mills</a>, there&#8217;s amaranth, spelt and kamut flakes, while from <a href="http://www.naturespath.com/products/cold_cereals">Nature&#8217;s Path</a> brand, you can get spelt or millet flakes, or even &#8216;heirloom wholegrain&#8217; cereal containing &#8220;Organic Kamut®* wheat flour, organic wheat bran, organic evaporated cane juice, organic spelt flour, organic whole oat flour, organic whole wheat meal, organic barley flour, organic whole millet, organic barley malt extract, organic quinoa, sea salt, organic honey.&#8221;</p>
<p>First, I chomped through a delicious box of crispy oat flakes from <a href="http://www.arrowheadmills.com/products/cold-cereals.php">Arrowhead Mills</a> &#8212; not raw oats that have to be cooked into a porridge, but just like cornflakes. Having forsworn Kelloggs&#8217; cornflakes so long ago, I had totally erased the idea of cornflakes from my consciousness, but the &#8216;gluten-free&#8217; tag drew my attention to <a href="http://www.naturespath.com/products/cold_cereals">Nature&#8217;s Path</a> Honey&#8217;d Corn Flakes (Organic corn meal, organic evaporated cane juice, organic honey, sea salt). What a rediscovery for me! I couldn&#8217;t believe how delicious this box of cornflakes tasted, largely thanks to an excellent crisp texture.</p>
<p>As for the milk part, occasionally, I&#8217;ll indulge with dairy milk, but otherwise, I&#8217;ll rotate oat, rice and soy milks.</p>
<p>Yaay, one more viable snack option :).</p>
<p>29/11/08 Update: Cheapest place to buy <a href="http://www.naturespath.com/products/cold_cereals">Nature&#8217;s Path</a> cereals that I&#8217;ve found in Singapore so far is <a href="http://www.meidi-ya.com.sg/en/">Meidi-ya </a>supermarket. It costs S$5.95 a box, which is the same or just a bit more than standard brands like Kelloggs and Post. It&#8217;s stocked on the regular breakfast cereal shelves, next to <a href="http://www.arrowheadmills.com/products/cold-cereals.php">Arrowhead Mills</a> cereals.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Food sensitivities come on many levels and the last few months I’ve tried to work on fine-tuning my diet to take into account foods that I can tolerate, but which aren’t actually great for my system. So I’ve had to face up to the fact that chocolate should only be an  occasional indulgence (the same way alcohol is to others, perhaps &#8211; both impair brain function!), and now, finally coming out of denial about the effect of wheat and gluten on me. This has been hard because I love baking so much, and alternative flours will always be that much more difficult to work with, requiring plenty of patient experimentation.</p>
<p>Just got a new gluten-free recipe book today, <a href="http://www.amazon.com/Gluten-Free-Gourmet-Bakes-Bread-Wheat-Free/dp/0805060782/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1224264833&amp;sr=8-1">The Gluten-Free Gourmet Bakes Bread</a> by the <a href="http://glutenfree.wordpress.com/2007/09/16/bette-hagman-from-the-seattle-times-916/">late</a> Bette Hagman, and the best thing about it is the explanation of the results from different types of flours. Hagman has moved beyond the rice-based GF flour mix  she used in her earlier recipe books  &#8212; and many gluten-free recipes from other sources also use mainly rice flour as a replacement &#8212; as the results are noticeably different from using wheat flour, particularly in terms of texture. She has found that bean flours are much better, particularly for bread.</p>
<p>Hagman’s Four Flour Bean Mix recipe (available ready mixed from <a href="http://authenticfoods.com">Authentic Foods</a>) :<br />
2/3 part: garfava bean flour (a garbanzo/chickpeas flour + fava flour mix, produced by <a href="http://authenticfoods.com">Authentic Foods</a>)<br />
1/3 part: sorghum flour<br />
1 part: cornstarch<br />
1 part: tapioca flour</p>
<p>This sounds pretty exciting but first of all, I needed to stock up on bean and other alternative flours. I immediately thought of shopping at <a href="http://www.mustafa.com.sg/index.asp">Mustafa</a>, which turned out to have everything I was looking for and more! No need to turn to <a href="http://www.bobsredmill.com">Bob’s Red Mill</a> flours which costs S$5 upwards for about 500g :). A wide range of non-wheat flours are common to Indian cooking and thus easily available at affordable prices. Cornstarch and tapioca flour are common in Chinese cooking and easily available at regular supermarkets in Singapore (NTUC is the best for a wide range of Chinese &amp; Southeast Asian flours).</p>
<p>Here’s what I bought in <a href="http://www.mustafa.com.sg/index.asp">Mustafa</a>:<br />
* Jowar flour = <a href="http://en.wikipedia.org/wiki/Sorghum">sorghum</a><br />
* <a href="http://en.wikipedia.org/wiki/Besan">Besan/ chana dhal</a> flour = garbanzo beans/ chickpeas [can be easily <a href="http://en.wikipedia.org/wiki/Besan#How_to_make">made at home</a> too]<br />
* Green bean flour = <a href="http://en.wikipedia.org/wiki/Mung_bean">mung bean</a> &#8212; the Indian variety looks coarser and less refined than the Indonesian type (hoon kwee flour), possibly the the latter has had the skin removed<br />
* <a href="http://en.wikipedia.org/wiki/Urad_dal">Urid/urad dhal</a> flour = black gram (similar to mung beans)<br />
* Roasted ragi flour = <a href="http://en.wikipedia.org/wiki/Finger_millet">finger millet</a><br />
* White rice flour &#8212; similar to that used in Chinese cooking but the Indian version seems a bit coarser and less white, which could suggest less bleaching (have always wondered about this when it comes to Chinese rice flour)</p>
<p>Other non-wheat flours sold at Mustafa include:<br />
* Bajra/ kambu flour = <a href="http://en.wikipedia.org/wiki/Pearl_millet">pearl millet</a><br />
* Kotu/ kuttu flour = <a href="http://en.wikipedia.org/wiki/Buckwheat">buckwheat</a><br />
* Makka flour = cornmeal, comes in fine &amp; coarse (different from cornstarch)</p>
<p>Of course, one route to gluten-free bread substitutes is simply to make the Indian dishes that use these non-wheat flours. Here’s a sampling:<br />

<p>I’ll mix the chana dhal flour with a mix of the other bean flours to replace the ‘garfava flour’ in Hagman’s Four Flour Bean Mix. Will have to open the various packets to check if the other bean flours have a particularly strong taste that will affect the flour mix. 			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Some readers have asked about my bento equipment, which I occasionally &#8211; only very occasionally &#8211; write about. Perhaps my favourite of all my bento things are my bags, a natural extension of my love of bags in general :). I love the shape of lunch bags and in my pre-bento past, have been known to carry <span style="text-decoration:underline;"><a href="http://www.daiso-sangyo.co.jp/english/">Daiso</a></span> lunchbags as handbags, even the silver-coloured insulated ones!</p>

<p>To kick off my bento bag series, here is my classic cream-coloured <span style="text-decoration:underline;"><a href="http://www.muji.net/eng/">Muji</a></span> bag (about S$13), which I bought after having busted my third <span style="text-decoration:underline;"><a href="http://www.daiso-sangyo.co.jp/english/">Daiso</a></span> lunchbag! (They&#8217;re OK for just a simple lunchbox but a 700ml bottle of drink will certainly bust those cheapo S$2 handles!). It&#8217;s the same <span style="text-decoration:underline;"><a href="http://www.muji.net/eng/">Muji</a></span> bag I wrote about <span style="text-decoration:underline;"><a href="http://mainmainmasakmasak.wordpress.com/2007/12/05/mujis-xmas-bento-set/">here</a></span>, but this one came separately, not in a set.</p>
<p>The high quality of this <span style="text-decoration:underline;"><a href="http://www.muji.net/eng/">Muji</a></span> bag was such a welcome relief and indeed a pleasure. The silky, lined interior and botton-clasp top flap are lovely touches.</p>
<p>It also matches well with <span style="text-decoration:underline;"><a href="http://mainmainmasakmasak.wordpress.com/2008/02/06/new-bento-box/">my white Asvel bento box</a></span>, and white plastic cutlery.</p>

* organic, salt-free brown rice cake from <a href="http://www.lundberg.com/products/cakes/organic_salt_free_brown_rice_cakes.aspx">Lundberg</a> &#8212; a crumbly rice cake, not as smooth a texture as Kallo brand, but then again, this one is brown rice. Most rice cakes are soft and taste stale straight out of the packed, especially Lundberg, but nothing a couple of minutes in the oven toaster won&#8217;t fix. Be careful as rice cakes burn easily, so set the oven toaster timer for just 2 minutes but leave the rice cakes in for 5 minutes to crisp up slowly in low heat.</p>
<p>* Pearl of the Orient tea from <a href="http://gryphontea.com/">Gryphon</a> brand &#8212; <a href="http://gryphontea.com/pdfs/media/BToct14.jpg">Singapore brand of gourmet teas</a> in elegant packing. The extra-large fine mesh bags seem excessive but actually tea leaves need space to expand and release their full flavour. Gryphon&#8217;s Earl Grey is lovely (the brand&#8217;s best-selling tea in Singapore) but Pearl of the Orient, a jasmine+rose Chinese tea is definitely over-fragranced. Cheapest place to buy Gryphon teas is <a href="http://www.fairprice.com.sg/Corporate.aspx?page=fairprice-stores">NTUC Finest</a> at S$10.50 a box of 20 tea bags, $2 cheaper than chi-chi gourmet delis like <a href="http://www.culina.com.sg/Shops/CulinaShops.htm">Culina</a>.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>For ages, I have been watching my family members eating tinned baked beans for breakfast, unable to join in because of the tomato sauce which is high in <a href="http://www.fedupwithfoodadditives.info/factsheets/Factintroduction.htm">glutamates, amines and salicylates</a> (not to mention plenty of salt &amp; sugar)!! The other day, I finally got down to making <a href="http://www.fedupwithfoodadditives.info/factsheets/Factintroduction.htm">Failsafe</a> baked beans from the recipe in the <a href="http://www.librarything.com/work/book/31489832">Friendly Foods</a> cookbook.</p>
<p>The result was wonderfully satisfying! Even my family members who are used to the over-flavoured commercial version pronounced this &#8217;surprisingly edible&#8217;.</p>

<p><span style="text-decoration:underline;">RECIPE</span></p>
<blockquote><p>300g (1 1/2 cups) dried beans &#8211; navy, cannellini or flageolet<br />
1 leek, washed and sliced<br />
2 sprigs parsley<br />
1 clove garlic, peeled<br />
2 x 5cm pieces celery<br />
2 Tbs soft brown sugar<br />
1/4 tsp citric acid<br />
3/4 tsp saffron threads [which I omitted, hence the anemic colour of my baked beans]<br />
sea salt</p>
<p>Wash beans and soak overnight with 1.5 litres water. Drain the next day.</p>
<p>Place beans &amp; leek in saucepan. A heavy-bottomed pot for slow-cooking is good, such as a cast iron pot. You can also use a crockpot.<a href="http://mainmainmasakmasak.wordpress.com/wp-admin/post.php?action=edit&amp;post=772">Main-Main Masak-Masak › Edit Post — WordPress</a></p>
<p>Tie the parsley, garlic and celery into a bouquet garni with a piece of string and add this to the pot.</p>
<p>Pour in enough water to cover the beans. Simmer uncovered for about 1 hour or until tender. Remove the bouquet garni.</p>
<p>Add the sugar, citric acid, saffron and salt to taste. Simmer for another 10 minutes.</p></blockquote>
<p>Here I used dried organic navy beans which I bought at <a href="http://www.natures-glory.com/home.asp">Nature&#8217;s Glory</a>.</p>
<p>If you don&#8217;t have time to soak the beans overnight, you can use canned beans. It can be hard to find navy/cannellini/flageolet beans, but I&#8217;ve seen them at Carrefour and Cold Storage, as well as at health food stores like <a href="http://www.eat-organic.com.sg/">Eat Organic</a> and <a href="http://www.natures-glory.com/home.asp">Nature&#8217;s Glory</a>. Basically, check the stores which stock more western ingredients.</p>
<p>With navy and cannnellini beans being more unusual products in Singapore, even the non-organic canned ones only come in relatively expensive foreign brands. The good news is that tinned, organic navy and cannnellini beans are available at about the same price as non-organic ones :), S$2.30 per tin for <a href="http://www.edenfoods.com/store/index.php?cPath=21_32">Eden</a> brand. Other organic brands cost about a dollar more.</p>

<p><strong>6/12/8 Update:</strong></p>
<p>Tip 1: Make a large batch, divide into serving portions and freeze. Defrost as necessary.</p>
<p>Tip 2: Aside from eating baked beans with bread (<a href="http://mainmainmasakmasak.wordpress.com/2008/11/01/improved-recipe-for-gluten-free-yeast-free-bean-bread/">gluten-free bean bread</a> for me) and <a href="http://mainmainmasakmasak.wordpress.com/2008/10/01/breakfast-baked-beans-brown-rice-cake-chinese-tea/">rice cakes</a>, it&#8217;s also good with rice. Especially quick and easy if you have cooked rice on hand at all times in the fridge or <a href="http://justbento.com/handbook/bento-basics/how-freezing-preportioned-rice">freezer</a>.</p>
<div>Recently, I enjoyed a midnight snack of <a href="http://mainmainmasakmasak.wordpress.com/2007/07/19/buying-japanese-rice/">Japanese rice</a> and homemade baked beans, topped with strips of Japanese nori seaweed &#8212; delicious!</div>

<p>Just Bento has reviewed a small Fit N Fresh chiller plastic box <a href="http://justbento.com/bento-box-week-fit-fresh-breakfast-chiller">here</a>. Personally I wasn&#8217;t impressed, the lunchboxes aren&#8217;t very attractive, don&#8217;t look leakproof and don&#8217;t seem to be particularly well-made, certainly not of the quality one might expect from a US brand. Anyway, these are not especially useful for me because my packed lunches are almost always rice with side dishes that are best warm or at room temperature, rather than chilled.</p>

I have found functional bento boxes (as opposed to cutesy and child-sized type which are plentiful in <a href="http://www.daiso-sangyo.co.jp/english/">Daiso</a>) in different capacities on sale in Singapore! If you&#8217;re looking for a basic bento box similiar in design to <a href="http://mainmainmasakmasak.wordpress.com/2008/02/06/new-bento-box/">my Asvel box</a>, head straight to <a href="http://www.meidi-ya.com.sg/en/">Meidi-ya</a>.</p>
<p><a href="http://www.lustroware.co.jp/cj/product/foodcontainer/index.html">Lustroware</a> clear boxes in three sizes: 490ml (S$13.90), 670ml (S$14.90), and 890ml (S$18.90). They are microwavable, have leakproof seal, and a movable divider.</p>
<p>There are also dark grey and black, very large men&#8217;s style bento, some of which come with insulated slipcase, and which cost up to S$31.90. There are single layer and double layer men&#8217;s boxes.</p>
<p>The boxes are all labelled with Ag+, indicating silver ions to give the plastic an anti-bacterial property.</p>
<p>All the <a href="http://www.lustroware.co.jp/cj/product/foodcontainer/index.html">Lustroware</a> boxes which I saw in <a href="http://www.meidi-ya.com.sg/en/">Meidi-ya</a> are manufactured in China for the Japanese market.</p>

<p><a href="http://www.miinkimoop.com.au/">Qubies</a> are ice cube trays that make 30ml-sized portions, perfect for feeding babies, but also for anyone who needs to freeze foods in small portions. Regular ice-cube trays divide up into portions that are too small for foods. The unique thing about Qubies is also that the dividers are in the lid.</p>
<p>Then again, <a href="http://www.miinkimoop.com.au/">Qubies</a> aren&#8217;t cheap at AU$16.95 each (excluding postage). The cheaper, but less elegant and more space-consuming option would be use a bunch of stackable <a href="http://us.locknlock.com/">Lock &amp; Lock</a> E-Z Lock containers, which is what I have been doing so far. However, the <a href="http://www.locknlock.com.cn/Product/Display_Product_267.html">smallest E-Z Lock is 190ml</a>, which is sometimes be too big. <a href="http://cantonpixie.blogspot.com/">Canton Pixie </a>has mentioned in the comments on this blog her method of using disposable (but washable &amp; reusable) <a href="http://www.partyware.com.sg/index_files/Page4014.htm">plastic sauce or pudding containers</a> from <a href="http://www.partyware.com.sg/">SKP</a> to freeze baby food.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>I&#8217;ve realised it&#8217;s time to face up to my less-serious intolerances, the ones that don&#8217;t make me obviously ill but also keep me from being in top form. Chocolate is one of these *sob* but quite an easy one to avoid. The more difficult one is wheat because it is used so heavily in baked goods. I have already purchased some wholegrain <a href="http://en.wikipedia.org/wiki/Spelt">spelt</a> flour to see if it works well for me in my next round of baking and will finally begin look more closely at other alternative flours. On the one hand, I feel tired at having to learning about new baking ingredients but trying to look on the positive side, it&#8217;s also an opportunity to expand my knowledge and improve my baking skills.</p>
<p>Quite by chance, I made some pleasant discoveries whilst shopping in <a href="http://www.carrefour.com.sg/">Carrefour</a>. The first was buckwheat crepes, a traditional staple in Brittany and Normandy, which are called <a href="http://en.wikipedia.org/wiki/Galette">galettes</a>, from the premium in-house <a href="http://www.carrefour.com/cdc/group/current-news/10th-anniversary-of-reflets-de-france.html">Reflets de France</a> range. It was great to note that there were no nasty additives in the ingredients list. These aren&#8217;t cheap at more than S$1 a piece (pack of 6) but I&#8217;m tempted to get some to see how <a href="http://mainmainmasakmasak.wordpress.com/2008/02/02/buckwheat-pancakes-brown-rice-syrup/">my own homemade version</a> compares.</p>
<p>While the buckwheat crepes were huge, a small pack of <a href="http://www.dovesfarm.co.uk/detail.html?itemId=301&amp;categoryId=149">organic wholegrain spelt waffles</a> from UK brand, <a href="http://www.dovesfarm.co.uk/index.html">Dove&#8217;s Farm,</a> costs just as much. Nevertheless, it was a great to see these organic non-wheat options right there on the shelves of a mainstream supermarket chain.</p>
<p>N.B.: Spelt is an ancient variety of wheat which is tolerated by some &#8211; not all &#8211; wheat-intolerant individuals. It is not gluten-free.</p>

As I mentioned <a href="http://mainmainmasakmasak.wordpress.com/2008/07/13/all-about-scones/">earlier</a>, my secret to a successful English afternoon tea is Marks &amp; Spencer&#x2019;s tea. </p>
<p><a href="http://www2.marksandspencer.com/thecompany/our_stores/world-results.asp?country=30">M&amp;S Singapore</a> is currently selling organic tea at S$6.50, down from the regular price of S$9.90, for the pack of  80 tea bags. M&amp;S red label tea is also reduced to S$4.90 for 80 tea bags. This compares extremely well with regular supermarket teas which are generally sold in boxes of 20 teabags. The M&amp;S tea bags are packed in vacuum-sealed foil packs of 40 bags each.</p>
<p>Both the organic and red label teas are medium strength and a blend of East African and Indian teas. Expiry is end March 2009. </p>
